- 4Â skinless, boneless chicken breast halves
- salt and freshly ground black pepper to taste
- 2 tablespoons all-purpose flour
- 2 large eggs
- 1Â cup of panko bread crumbs
- ¾ cup grated Parmesan cheese, divided
- ½ cup olive oil or as needed for frying
- ½ cup of tomato sauce
- ¼ cup of cubed fresh mozzarella
- ¼ cup of chopped fresh basil
- ½ cup of grated provolone cheese
- 2Â teaspoons of olive oil

Directions
Begin making the chicken parmesan by preheating the oven to 450 °F. You will then put the chicken breasts in between two sheets of plastic or inside a resealable freezer bag. On a level and solid surface, you will firmly pound the chicken. A meat mallet would be the preferred tool to pound the chicken, but if your kitchen is mallet-free then other items like a rolling pin can be used in a pinch. You need to beat the chicken breasts until the chicken is about a half inch thick. Next, you need to season the chicken with pepper and salt. After that, you will sprinkle the flour over the chicken with a sifter, making sure each side of the chicken breast is thoroughly coated.
Then in a shallow bowl, you will beat the two eggs. Put this aside. In another bowl, you will combine the bread crumbs and just half a cup of the Parmesan cheese. You will put this aside as well. Next, you will take a flour-dusted chicken breast and dip it into the beaten eggs. Then, you will dip the chicken into the Parmesan and bread crumb mixture, making sure to coat each side. You will do this for the remaining three chicken breasts. Let the chicken breasts rest for about 15 minutes.
After the 15 minutes is up, you will heat about half an inch of olive oil on medium-high in a large skillet until it starts to simmer. You will fry the chicken for about 2 minutes on each side until it is the chicken breast is golden. If this does not seem like long enough, then do not fret. When you place the chicken in the oven to bake, it will finish cooking.
You will place each fried chicken piece into a baking dish. Cover each chicken breast with 2 tablespoons of tomato sauce. Then coat each piece with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. You will then sprinkle Parmesan cheese that is remaining on top and drizzle half a teaspoon of olive oil on each chicken breast. You will bake the chicken for around 2o minutes. The cheese should be bubbly and browned, and the chicken breasts should thoroughly cooked with no pink in the center.
