Try These Summer Salads

Fresh Peach Salad
Mixed leafy greens make up the foundation of this salad, but it will also benefit from a variety of fresh flavors before you ever drizzle on its rich vinaigrette. Ripe peaches are essential to this recipe, so give each peach a light squeeze to see if it is ready to go. If the peach gives to the pressure, then it should be ripe and ready, but if it feels firm, then it is probably wise not to use it just yet. Canned corn adds a bit more subtle sweetness, and if you would like to take a minute to toast some almonds, they will add a delightful crunch with each bite. Red onion and a crumble of feta cheese will complete the mix, which is now ready for a drizzle of balsamic vinaigrette.
Grilled Caesar Salad
If you are hosting a cookout this summer, you do not have to step away from the grill to prepare your salad. Keep the coals (or propane) burning and add some romaine leaves to the grates. Just slice some lettuce, splash the leaves with some olive oil (and even a vinaigrette if you want), season with salt and pepper, then grill the leaves just long enough to achieve a light charring – about two to three minutes. The base of your salad is now ready, so build on the foundation by grilling some split, olive-oil-rubbed avocado (pits removed) for four to six minutes, face down. When the grilled items are done, complete the salad by adding on chopped cherry tomatoes, parmesan cheese, and Caesar dressing.
Strawberry Spinach Salad
How about a salad for dessert? This salad’s dressing is syrupy sweet but not overpowering, making it the perfect for the start, end, or focus of a meal. Build the salad with mixed greens, baby spinach leaves, red onion, chopped pecans, and fresh sliced strawberries. For the dressing, blend strawberries, maple syrup, apple cider vinegar, olive oil, and kosher salt until smooth, then pour it over the salad and serve.
